Currently each dragon color is a category. Thoughts on this?
How about this?
Chromatic Dragons (black, blue, green, red, and white)
Metallic Dragons (brass, bronze, copper, gold, and silver)
Pseudo-Dragons (drakes, turtle dragons, lightning heads, etc.)
Mystic Dragons (cloud dragon, faerie dragon, mist dragon, shadow dragon, force dragon, etc.)
Gem Dragons (onyx dragon, jade dragon, ruby dragon, amber dragon, crystal dragon, etc.)

That is a good train of thought, and I would add Planar Dragons to that list, as well as Humanoid Dragonic Creatures (which sorcerers of a draconic bloodline would fall into as well as Draconians).
The other possible divisions would be be element:
Fire Dragons
Lightning Dragons
Cold Dragons
Earth Dragons
Water Dragons
I am not sure which division method I prefer.

I like metallic and chromatic as Groups a lot more then sorting by energy.

Wouldn't humanoid dragons simply fall under the category that created them? Dragon Sorcerers would be whatever lineage they fall under and humanoid dragons would be whatever their true form is, unless you were referring to creatures like Kobalds and Troglodytes.

Lesser Dragon (drakes, turtle dragons, lightning heads, pseudodragons, draconis wyverns, etc.)
Mystic Dragons (faerie dragon, shadow dragon, force dragon, fang dragon, etc.)
Gem Dragons (onyx dragon, jade dragon, ruby dragon, amber dragon, crystal dragon, etc.)
Planar Dragons (astral dragon, ethereal dragon, styx dragon, radiant dragon, etc.)
Element Dragons (grey dragon, cloud dragon, sand dragon, yellow dragon, etc.)
A note that typical wyverns are not dragons, but they are beasts in the same category as griffon. The wyverns that have a draconic color and a breath weapon pseudo dragons.

Is it necessassary to have this level of granularity considering how rare dragons are on Habololy? I don't see anyone ever taking most of these.

Yes. In theory, the traits rangers learned and Dragonslayers go back to a time when there were more.
