Everyone disappeared.  The centipede, the villagers following Oz, and the girl from the claw.  They all vanished when Yoshi's firebolt hit/killed the centipede.

Oz will go around and check the other houses for people, items, or any other indication that there is actual life here in this village.

Do the structures change when everyone disappears or do they look the same?

Seemingly some type of illusion spell cast over the area.  Whoever/whatever cast it is still lurking around out there.
